Ingredients

  • 6 Lundberg Family Farms® Organic Brown Rice Cakes – Lightly Salted
  • 1/2 cup Organic Brown Rice Syrup
  • 1 cup almond butter
  • 1 cup dates, pitted
  • 1/2 cup almonds, roasted, salted
  • 1/2 cup hemp seeds, hulled
  • 1/4 cup cocoa powder

Method

  1. In a small saucepan over low heat, add the almond butter and brown rice syrup. Mix until thoroughly combined. Set aside to cool.
  2. In a food processor, combine the almonds and dates. Pulse until finely ground.
  3. In a large bowl, crumble the rice cakes. Add the almonds, dates, hemp seeds, and cocoa powder. Coat with the heated almond butter mixture.
  4. Mix the ingredients until fully incorporated. Spoon golf ball-sized portions of the mixture and roll into balls. Repeat until the bowl is empty. Keep refrigerated and enjoy.
